Winter clean soup that I discovered in a village in KastroSykias and fell in love with this recipe for velvety chicken soup with pumpkin and sweet potato is a traditional, warm and fragrant dish that will warm you up during the cold days of winter. Ingredients:
1 medium chicken, cut into pieces
300g pumpkin, chopped
2 carrots, chopped
2 sweet potatoes, chopped
1 leek (white part only), chopped
1 small piece of ginger,
finely grated Butter
Salt, pepper

Directions

Instructions:

In a pot, add the chicken with a pinch of salt, the leek, and enough water to cover it. Boil on high heat for about 50 minutes (skim the foam periodically). Next, remove the chicken and strain the broth to remove any bones or impurities. In another pot, bring the broth to a boil and add the chopped vegetables. Once the vegetables are well cooked, add the butter and adjust the taste. Using an immersion blender, puree the soup until it becomes velvety and smooth. Shred the chicken and add it to the soup. Serve hot.
