This season brings an abundance of oranges! We use oranges in all our preparations—cakes, liqueurs, spoon sweets, cookies, and much more. Today, we'll discover juicy orange slices, easy to make, beloved by all, and incredibly delicious. The combination of chocolate with oranges is a perfect match, and the touch of cinnamon and walnuts elevates it even further! Let's get started!
Ingredients:
• 750g small, thinly peeled oranges
• 750g crystallized sugar
• 350g fresh orange juice
• 200g water
• 1 tsp ground cinnamon
• 250g couverture chocolate
• Lemon drops
• Half a walnut for each slice
1. Choose the smallest and thinnest peeled oranges. Rinse them thoroughly, and then zest the entire surface of the oranges with a knife. Pay attention! We don't want to cut or damage them but only zest them.
2. Next, we'll blanch the oranges in boiling water for 3-4 minutes. Then, remove the oranges from the pot, discard the water, and add fresh water, repeating this process two more times. We do the same with the spoon sweets, to separate the zest and soften it.
3. Now, we take our oranges, remove both ends, and cut beautiful, even slices of about one centimeter. Then, using the tip of a knife, remove any seeds if there are any (usually, small oranges don't have seeds).
4. In a pot, combine the juice (after draining) with the crystallized sugar, water, and 1 tsp of cinnamon. Add the orange slices carefully and let them simmer until the syrup thickens.
5. To prevent excessive sweetness, add a few drops of lemon into the syrup and let the orange slices soak in the syrup until they become super juicy throughout the night.
6. The next day, gently remove the orange slices and place them on a platter with parchment paper underneath. Put them in the fridge to cool and firm up, sealing the syrup.
7. Once the orange slices have cooled well, melt the couverture chocolate and dip each slice halfway into the chocolate. Place them on parchment paper and top each slice with half a walnut. Put your orange slices in the fridge to cool.
8. Remove them from the parchment paper and arrange them on your serving platter. Enjoy your treat!
