Our Ingredients:
• 290g granulated sugar
• 250g butter
• 440g flour
• 250g dark brown sugar
• 6 eggs
• 200g full-fat yogurt
• 1 shot of cognac
• 1 (150g) can of candied fruits (100g for the cake, 50g for garnishing)
• Cherries for garnishing
• ½ tsp cinnamon
• ? tsp ground cloves
• ? tsp ginger
• ? tsp nutmeg
For the glaze:
• 300g powdered sugar + 50g warm water
Instructions:
1. Sift the flour to aerate it in a bowl. Add the spices to the mixture.
2. In the mixing bowl, cream the sugar with the butter until fluffy.
3. Then, add the yogurt, eggs, and cognac. Take a teaspoon of flour from the mixture and mix it with the candied fruits.
4. Gradually add the flour mixture to the mixing bowl.
5. Grease the cake mold and spread the mixture evenly.
6. Place the candied fruits on top and carefully fold them into the mixture using a spoon.
7. Bake the cake in a preheated oven at 180°C (350°F) for about 55-60 minutes. Test with a toothpick or knife before removing - it should come out clean.
8. For the glaze, mix the powdered sugar with warm water in a bowl. Spread it over the cake.
9. Dust the candied fruits with flour before adding them to the mixture to prevent them from sinking to the bottom.
10. The butter should be at room temperature.
11. Fill the cake mold about 3/4 full with the mixture.
12. Let the cake sit for 10-15 minutes after removing it from the oven before unmolding.
