There's no easier cake than this one!!! Delicious, full of aromas and flavors! Can you think of anything better for coffee, treats, or satisfying a momentary craving? Ingredients that we all have at home and, of course... an appetite! So, let's get started...
Ingredients:
340g grated carrots
240g eggs
560g self-rising flour
320g sugar
300g vegetable oil
100g natural orange juice
2 tsp brandy
2 tsp baking powder
2 tsp ground cinnamon
1 tsp baking soda
½ tsp ground ginger
? tsp ground cloves
A pinch of salt
Optional: 1-2 handfuls of raisins, walnuts, dried figs, finely chopped, etc.
Take a bowl. Add the grated carrots, eggs, sugar, orange juice, and mix very well. Then add all the remaining ingredients... It's that simple!!! No need for a mixer... Mix everything well until the ingredients are fully combined. If you want to add raisins, dried figs, etc., soak them in brandy to soften them, and then add them to the batter (after lightly coating them with flour).
Take a cake pan, butter it well, and pour in the batter. Bake in a preheated oven at 180°C (356°F) in the air setting for about 50 minutes (always check with a knife before removing the cake from the oven).
