Ingredients:

125g unsalted fresh butter

125g regular butter

200g powdered sugar

50g milk

50g lemon juice

650g all-purpose flour

17.5g baking powder

Zest of one lemon

1 egg (52g)

? tsp ginger

A pinch of salt

For brushing: 1 egg white mixed with a little water

Directions

Cream the powdered sugar with the butter until the mixture turns white. Then add the egg, lemon zest, lemon juice, and milk, and mix well. In a separate bowl, combine the ginger, baking powder, salt, and flour, and add it to our mixture. Beat well until a soft and pliable dough forms.

Shape the dough into cookies and brush the tops with the egg white-water mixture.

Bake in a preheated oven at 180°C (356°F) for approximately 15 to 20 minutes, depending on the size of the cookies and the performance of your oven.
