Simple and affordable aromatic lemon cookies made with ingredients that we surely have at home, for our fasting days. Without eggs, butter, and milk, we make cookies for our children to enjoy with our coffee...for a little indulgence!
Our ingredients:
A)
180g sugar
260g water
3 tbsp lemon juice
1 cinnamon stick
4-5 cloves
B)
220g sugar
200g vegetable oil
2 tsp baking powder
Zest from 2 lemons
850g all-purpose flour (approximately)
We start with Part A. In a small saucepan, we put our ingredients and let them simmer for 5-7 minutes. Once the time passes, we remove it from the heat and set it aside.
In a mixer, we beat the vegetable oil and sugar well until it dissolves. Then we add the baking powder, lemon zest, and syrup (Part A). Mix well and start adding the sifted flour.
Once a pliable dough is formed, we start cutting our cookies. We want them small and thin. We spread them on a baking sheet lined with parchment paper. Mine are approximately 12 each, but you can make them even smaller. Ensure they are thin in volume.
We bake them at 180°C (350°F) in a convection oven for about 10 minutes (depending on the shapes and sizes of your cookies).
