Light Samali with Yogurt

An easy and quick dessert, light and very tasty, to accompany your ice cream in the afternoon, your coffee, a treat, or the dessert of your Sunday meal. A wonderful recipe that was joyfully offered to me by Mrs. Kasomouli, and I thank her very much.

Ingredients:

  • 3 cups of low-fat cow yogurt (2% fat)
  • ½ cup coarse semolina
  • 1 tsp baking soda
  • 1 wineglass of ouzo
  • Zest from 3 oranges
  • 1 cup granulated sugar (1 cup for the mixture, the rest will go into the syrup)
  • 100g almonds

For the syrup:

  • 2 glasses of water
  • The remaining sugar
  • 1 cup fresh orange juice

Directions

  1. Mix the yogurt with the sugar using a whisk.
  2. Add the orange zest and ouzo (after dissolving the baking soda in it), and finally add the semolina.
  3. Mix well to homogenize the ingredients.
  4. Take a baking pan (about 28 cm in diameter), grease it, and pour in the mixture.
  5. Bake at 180°C (356°F) for 30 minutes.
  6. While the dessert is baking, prepare the syrup and the almonds.
  7. Peel and slightly crush the almonds, either with a mortar and pestle or in a blender, taking care not to turn them into powder.
  8. Toast the almonds in an oven on a baking sheet for about 10 minutes, until they acquire color. Sprinkle them over the warm dessert once it's slightly cooled.
  9. Once the dessert is done baking, pour the warm syrup over it.
