Loukoumades (Donuts)

The kids wanted some donuts today... and Stella is always up for it! Wonderful donuts for our little ones and for everyone we love.

Homemade donuts that you can fill with any filling you like, such as chocolate, jam, meringue, custard cream, or pastry cream, etc. And here are the instructions to make them and enjoy them just like we do. You can decorate them with glaze or powdered sugar, truffles, or colorful sprinkles, and why not, drizzle them with honey or sweet syrup.

Our Ingredients:

1. 200g warm milk

8g yeast

60g sugar

500g all-purpose flour

7g salt

2 eggs

1 vanilla pod

50g butter

Vegetable oil for frying

 

Directions

In a bowl, pour the warm milk (not hot, so the yeast won't get burnt), sugar, and yeast. Stir well and let the yeast activate (around 15 minutes).

Next, add the sifted flour, salt, eggs, vanilla, and butter to the bowl. Knead the dough for a while until it becomes fluffy and elastic. Place the dough in a greased bowl and cover it with a plastic wrap, allowing it to rise.

Once it has doubled in size, take the dough onto a floured surface and flatten it to a thickness of about 1 centimeter. Use a cookie cutter or a glass rim to cut out round shapes. You can make a hole in the middle with a small round cutter or leave them without a hole for filling. Place the donuts on a tray and cover them with plastic wrap to let them rise.

Once they have risen and doubled in size, fry them at 170°C (340°F) on both sides until golden brown. Then, place them on a wire rack to cool.

You can decorate or fill the donuts as desired.

 

Custard Cream Filling:

Basic mixture of eggs, sugar, vanilla for making various creams such as English cream or pastry cream, used for filling cakes, tarts, mille-feuille, and other desserts.

Our Ingredients:

6 egg yolks

100g sugar

50g flour

1 vanilla pod or 1 tsp vanilla extract

500ml milk

In a bowl, beat the egg yolks with the sugar until well combined. Add the sifted flour and mix well. In a saucepan, heat the milk with the vanilla until small bubbles start to form around the edges. Slowly pour the milk into the egg mixture while stirring continuously. Once everything is well mixed, transfer the mixture back to the saucepan and cook over medium heat until it thickens. Remove from heat, let it cool while stirring occasionally, and then cover it with plastic wrap, ensuring the wrap touches the surface of the custard to prevent a skin from forming. Chill in the refrigerator.

White Glaze:

Used to drizzle over donuts or decorate cakes, tarts, and other pastries.

Our Ingredients:

1 tbsp milk

2 tbsp powdered sugar

Mix the ingredients in a bowl to achieve a desired consistency. You can also add a few drops of food coloring for more vibrant results.

 

Cocoa Glaze:

Used to decorate sweets such as cakes, donuts, cookies, and more.

Our Ingredients:

1 tbsp cocoa powder

1 tbsp powdered sugar

1 tbsp milk

Mix the ingredients in a bowl to achieve a desired consistency. Don't forget the powdered sugar, as it balances the bitterness of cocoa.
