Every time I made an orange cake, I followed the classic method using zest and juice. This time, I decided to enrich it with whole oranges and cognac. The oranges used should be organic (I picked them from my own tree) and not waxed. So, a fragrant cake filled with orange flavor! We will dress it all around with slices, and it will be delightful! What's better than a slice of this cake next to your Sunday coffee?

For this cake, we will need a large round cake pan or 2 narrow and long ones.

Ingredients:

4 oranges (3 for the cake + 100g sugar)

300g sugar

4 eggs (around 280g)

125g slightly melted butter

170g orange juice with the pulp, and all the zest

10g cognac

500g sifted all-purpose flour

25g baking powder

Directions

Take the 3 oranges and wash them. Cut them into thin slices. Then, in a small saucepan, place the slices and add water. Let them simmer for 10 minutes. Then, discard the water and repeat the process. On the third time, when adding water to the orange slices, add the sugar and let them simmer for another 10 minutes. (PHOTO)

Next, strain the orange slices and carefully place them one by one on a clean parchment paper. Preheat the oven to 180°C (356°F).

While waiting for the orange slices to simmer, beat the sugar and eggs together until frothy. Then add the melted butter, orange juice with zest, and cognac. Gradually add the sifted flour and baking powder, mixing gently.

Grease the cake pan lightly and use a strip of parchment paper, cut to the perimeter size of the pan.

Place the parchment paper around the sides of the pan and arrange the orange slices inside, along the sides and on the bottom.

Carefully pour the batter into the pan, holding the orange slices in place. Once the batter is poured and the orange slices are stable, place the pan in the oven. Bake for about 50 minutes on the middle rack, using the convection setting.

Once baked, let it cool for a while, then remove the cake from the pan. Gently remove the parchment paper from around the cake. Dust with powdered sugar if desired, or make a simple glaze and drizzle it on top. However, the cake is also delicious as it is, with the caramelized oranges all around!
