A delightful pumpkin dessert, now that we have an abundance of it, let's make it to have for our sweets, our yogurt, our ice creams, for our cravings...well, this sweet treat goes everywhere!
Our Ingredients:
500g cleaned and cubed pumpkin
250g granulated sugar
250g honey
1 cinnamon stick
5-6 cloves
1 tsp citric acid
Juice from one juicy lemon
In a bowl, place the cubed pumpkin with water, lemon juice, and citric acid, and let it soak for about 6 hours.
Strain the water and in a wide pot, add the pumpkin cubes with the cloves and cinnamon, sugar, and honey. Stir very gently to avoid breaking the pumpkin cubes. When it starts to boil, remove any foam that forms on the surface. Let it simmer gently for about 15-20 minutes. Once the time has passed, remove the pot from the heat, let it cool, and cover it with a clean towel. Leave it overnight.
The next day, bring it to a brief boil to thicken the syrup. Transfer it, while still hot, into sterilized jars. Seal the jars and turn them upside down until they cool down.
