Ingredients:

240g coarse semolina

100g shredded coconut (and as much as you want to sprinkle on top)

270g melted butter

170g cake flour

270g sugar

200g yogurt (1 small container)

260g eggs (4 eggs)

2 vanilla pods

1 baking powder

Syrup: 2 cups sugar (550g)

3 cups water (950g)

Directions

  1. In the bowl of a mixer, beat the eggs and sugar until frothy.
  2. Add the shredded coconut, semolina, and yogurt to the mixture.
  3. In a separate bowl, mix the cake flour, baking powder, and vanilla pods together, then sift into the mixer.
  4. Mix well and pour the batter into a buttered and floured baking pan.
  5. Bake at 180°C until golden brown.
  6. Prepare the syrup by combining the sugar and water in a pot and simmering until the sugar dissolves.
  7. Add lemon juice to taste and pour the syrup over the cooled ravani.
