Soft oat cookies, without sugar, eggs, and butter

The healthiest cookies you can offer yourself, your children, and all those you love. Can you think of anything better than bites of oats filled with nuts and honey? Give your body dietary fiber, vitamins, proteins, antioxidants, and remove all unhealthy ingredients. Soft cookies for your little ones and adults, perfect for enjoying with your cup of coffee!

Our ingredients:

  • 300g honey
  • 300g rolled oats
  • 300g water
  • 500g self-rising flour
  • 1/2 cup olive oil
  • 150g coarsely chopped almonds-walnuts
  • 50g pine nuts
  • 1 tsp ground cinnamon
  • 1 tsp ground cloves
  • 1 tsp white vinegar
  • 1 tsp salt
  • 1/2 tsp ground ginger
  • 1/2 tsp baking soda

 

Directions

The execution is extremely easy. In a bowl, mix the dry ingredients (flour, oats, nuts, and spices). In another bowl, mix the wet ingredients (olive oil, honey, water + baking soda with vinegar). Combine them and shape a soft batter. You can taste it to adjust the sweetness or add more spices if desired. Personally, I don't prefer very sweet flavors, so the suggested amount provides a mildly sweet sensation.

Preheat your oven to 180°C (350°F). On a baking sheet lined with parchment paper, take spoonfuls of the batter and spread them into round shapes. If you prefer, you can slightly moisten your hands and shape small balls, placing them on the parchment paper and gently pressing them down while still on the sheet. Bake for approximately 20 minutes (depending on the size of your cookies).

Your cookies will be fragrant and soft. They will taste even better once they cool down completely.

If you want more sweetness, add more honey but reduce the liquid ingredients. Each type of honey has a different intensity and aroma, for example, flower honey is much sweeter than pine or chestnut honey.

  • You can also add chocolate chips for a sweeter chocolate flavor, or raisins, dried fig pieces, or dried fruits.
  • Because honey burns more quickly, use a lower temperature or reduce the baking time by 5 minutes.
  • If you make thinner cookies, you can sandwich them with your favorite jam for a healthy treat.
  • Serve them with homemade vanilla or chocolate ice cream or any other flavor you prefer.
  • The suggested measurements yield around 70-80 cookies.
