Here is my dad, loaded with oranges from our village trees. Beautiful oranges that will be put to good use. For treats, for our yogurt, for our desserts, for a thousand and one purposes! Let's get to work then!
Ingredients:
1 kg orange peels (the white part) from oranges
750-800 g sugar
1 tbsp glucose
800 g water
After cleaning the outer peel (the orange part) on the outside (we can keep it for orange liqueur οr we can grate it and freeze it for other uses like cakes, etc.), we carve the white part into 4-6 pieces. If we want rolls, we wrap them and secure them with a toothpick. We boil them for 5 minutes in a pot to remove bitterness. Repeat this process 3 times. After finishing this process, we add sugar, glucose, water, and the rolls to the pot, and simmer for about 45 minutes until the syrup thickens. We follow the same process if we want to have slices of orange. We carefully cut the slices between the membranes. During boiling, we avoid stirring to prevent the flesh from dissolving.
