Sweet Tomato Spoon Sweet: An easy and quick delicious sweet treat made with cherry tomatoes. I experimented by using brown sugar, and it turned out wonderful. The syrup took on a lovely caramel color, and the tomatoes became glossy like little gems!

Ingredients:

1 kg cherry tomatoes

1 kg brown sugar

½ cup coffee lemon juice

1 tsp powdered mastic from Chios

200 g Aegina pistachios

Directions

In a pot of boiling water, add the cherry tomatoes and let them soften for a while. Remove them from the water and let them cool slightly to avoid burns. Using a small knife, remove the eye of each tomato and gently squeeze to remove the seeds. Then peel them. Repeat this process for all the cherry tomatoes. In a separate pot, combine the brown sugar and powdered mastic from Chios with 200 g of water and bring it to a boil. Add the cherry tomatoes and let them simmer for about 45 minutes. Using a perforated spoon, remove the cherry tomatoes and let the syrup thicken. Add the Aegina pistachios. Once the syrup has thickened, return the cherry tomatoes to the pot with lemon juice and simmer for another 15 minutes. Allow the mixture to cool completely, and the next day, give it another brief boil. While it's still warm, transfer the sweet into jars, filling them to the top with the syrup. Close the jars tightly and turn them upside down to remove air bubbles (since there are no preservatives). Once cooled, turn them right side up. If you open a jar, store it in the refrigerator.
