Ingredients:

  • 500g all-purpose flour
  • 100g strong flour
  • 100g tahini
  • 70g olive oil
  • 70g sugar
  • 25g yeast
  • 330g lukewarm water

For the filling:

  • 300g tahini
  • 300g sugar
  • 3 tsp cinnamon
  • Powdered sugar for sprinkling

Directions

  1. In a bowl, mix the flours and sugar together.
  2. In a separate bowl, combine the olive oil and tahini.
  3. Dissolve the yeast in 30g of lukewarm water.
  4. Make a well in the middle and add the olive oil-tahini mixture, yeast mixture, and the remaining lukewarm water. Knead until the dough becomes pliable. Let it rest.
  5. In the bowl with tahini, prepare the filling by mixing tahini, sugar, and cinnamon until it forms a thick paste.
  6. Take a piece of dough and roll it out into a square shape. Make sure to have enough surface area for multiple layers when rolled.
  7. Spread the filling evenly across the dough surface and roll it up gently to form a small pie roll.
  8. Using a knife, cut the roll into pieces, about 3-4 cm each.
  9. Gently flatten each piece with your hands and transfer them to a baking tray lined with parchment paper.
  10. Continue the same process with the remaining dough.
  11. Place the baking tray in a warm place to allow the pies to rise. Then, bake them at 180°C until they turn a golden color.
  12. Once baked, sprinkle them with powdered sugar. Enjoy your meal!
