Pat-a-Pompe Mousse
In a mixing bowl, whisk the egg yolks until they start to whiten. In a saucepan, combine the sugar and water, and heat until it reaches a light syrup consistency. Slowly pour the syrup into the mixing bowl with the yolks, whisking continuously. Incorporate the whipped cream gently, being careful not to deflate it, and add the melted chocolate, stirring gently.
For the Finishing Touch:
In a separate bowl, beat half of the sugar with the egg yolks and vanilla until light and frothy. In a saucepan, heat the milk, cream, and the remaining sugar. Once warm but not boiling, slowly pour the milk mixture into the egg yolks, whisking vigorously until slightly thickened. Add the melted chocolate, previously melted using a bain-marie, and mix until smooth. If the mixture doesn't thicken, you can add a little cornflour.
Bake the chocolate sponge cake in a greased baking pan. Make sure it's not too thick when spreading the batter, around 1 inch in height.
Once baked, place a kitchen towel on top and allow it to cool completely. Once cooled, spread the filling evenly across the cake using a spatula. Roll it into a log shape and refrigerate to set.
After it has chilled, remove it from the refrigerator and cover it with the chocolate cream. Create grooves and lines resembling the texture of a log.
