Asparagus and Mushroom Omelette

The ultimate combination of exquisite flavors. A divine duet of pure ingredients straight from the forest into the hands of Nektarios, who graciously allowed me to cook with them. Morel mushrooms, porcini mushrooms, and wild asparagus come together to create a dish that simply cannot be compared in taste or value. Simple, yet so magnificent. Modest, yet so rich. Once you taste it, it becomes unforgettable.

Our ingredients:

  • 5 eggs
  • 15-20 wild asparagus spears
  • 150g milk
  • 1 tbsp butter or olive oil
  • 1 finely chopped onion
  • 1 clove of garlic, finely chopped
  • 3-4 morel mushrooms, porcini mushrooms, oyster mushrooms, etc.
  • Salt
  • Pepper

Directions

In a bowl, whisk the eggs until fluffy using a whisk or fork. Add the milk and continue whisking until well combined.

In a pan, saute the onion, garlic, mushrooms, and asparagus with butter or olive oil.

Add the egg mixture to the pan along with the milk.

Reduce the heat to low and gently stir the mixture. Season with salt and freshly ground pepper.

Once the omelette is cooked from the bottom, flip it over.
