Mustard Greens and Mushroom Omelette

Our ingredients:

  • 4 large eggs, well beaten
  • 1 small onion, finely chopped
  • 2-3 fresh spring onions, finely chopped
  • 1 clove of garlic, finely chopped
  • 2 bunches of mustard greens
  • 3-4 mushrooms
  • Olive oil
  • Salt and pepper

Directions

Lightly saute the onions. Then add the mushrooms and let them saute lightly. Add the garlic and the mustard greens. Saute gently until wilted. Pour the beaten eggs over the mixture, season with salt and pepper, lower the heat, cover the pan, and let it cook slowly.

Carefully flip the omelette to cook the other side.

Serve it warm, drizzled with a little olive oil on top.
