A light, heavenly omelette that is incredibly delicious and satisfying. Your children will love it, as it has a wonderful taste and introduces them to these vegetables in a different and enjoyable way. But it's also a low-fat omelette option for us, complementing our diet.
Our ingredients:
Boil the potatoes, broccoli, and cauliflower lightly. Drain them well.
In a bowl, beat the eggs and add the milk and grated cheese (saving a little for serving).
Heat some olive oil in a pan and lightly saute the potatoes, broccoli, and cauliflower. Pour the egg mixture on top. Season with salt and pepper, and cook over medium heat. Once cooked on one side, flip the omelette to cook the other side.
Serve it warm, topped with crumbled feta cheese and freshly ground pepper.
