A wonderful, fragrant, summery omelette that is so tasty and light, it will win you over. Easy to make and quick, with zucchini blossoms and feta. Perfect for a light meal or a quick appetizer with a glass of wine.
Our ingredients:
Carefully wash the zucchini blossoms, removing the stamens from inside. Place them on absorbent paper to drain.
In a pan, heat olive oil over medium heat and saute the zucchini blossoms until they wilt. The temperature should be moderate in our pan. While sauteing the zucchini blossoms, in a bowl, beat the eggs with yogurt and flour until well combined. Once the zucchini blossoms are wilted, pour the egg mixture over them. Add the crumbled feta, salt, pepper, and mint.
Cook the omelette until it is cooked through on one side, then flip it to cook the other side.
