Ingredients:
• 4 fillets of fish (preferably sole or flounder)
• 2 zucchinis, finely chopped
• 2 potatoes, grated
• Half a fennel bulb, finely chopped
• A touch of dill
• 2 cloves of garlic, finely chopped
• 1 onion, finely chopped
• 1 green bell pepper
• 1 red bell pepper
• 1 lemon
• A bit of oil, salt, and pepper
• Parchment paper (greaseproof paper)
1. Cut four large pieces of parchment paper.
2. In a bowl, mix the chopped vegetables with salt, pepper, and a drizzle of oil.
3. Place the vegetable mixture on each piece of parchment paper.
4. Top the vegetables with a fillet of fish and two lemon slices on the surface of the fish.
5. Fold the parchment paper into a boat shape and secure it with twine.
Note: Make sure the twine used to secure the parchment packets with the fish is well-moistened.
6. Place the packets with the fish and vegetables in an ovenproof dish and bake for approximately 40 minutes at 180 degrees Celsius (350 degrees Fahrenheit).
