  • 1000g frozen bacalao, soaked and drained
  • 1000g assorted greens, such as spinach, wild greens, Swiss chard, dandelion greens, purslane, sorrel, and chicory
  • Herbs: dill, fennel, and parsley
  • 1 bunch of fresh onions, finely chopped
  • 1 leek, white part finely chopped
  • 1 peeled and diced tomato
  • Grelia olive oil
  • 2 cloves of garlic
  • 5-6 sun-dried tomato fillets
  • Salt and pepper

Directions

The proportions can vary according to personal preference and availability in the market. Start by washing and cleaning the greens. Finely chop the onions and leek. In a saucepan, saute the onions and leek. Then add the garlic and sun-dried tomato. Afterward, add the diced tomato and saute until it softens. Next, add the greens and cover the saucepan for 10 minutes. No water is needed as the greens will release their natural moisture. Finally, add the bacalao pieces and the herbs, and let it simmer for another 10 minutes.
