Baked Anchovies with

There's nothing better than catching fish straight from the nets they come in... And among them, I caught some anchovies to put in the oven. There's no dish more delicious than this!!! With its tomato and the rest of the vegetables from the garden, and the oregano I've gathered, they all give flavor. And in the end, just before serving, a drizzle of olive oil on top, so you can taste the mountain and the sea together. Blessing!!!!


Our Ingredients:
1 kg cleaned anchovies, boneless, and headless
4 tomatoes, deseeded and finely chopped
2 zucchinis, grated
2 carrots, grated
2 onions, grated
4 cloves of garlic, finely chopped
3-4 tbsp fresh oregano
Salt, pepper
Olive oil
1 juicy lemon

Directions

Start with the anchovies. Rinse them thoroughly, remove the heads along with the innards and tail. Rinse again and drain well, almost dry.
In a bowl, combine the grated zucchinis, tomatoes, carrots, onions, garlic, salt, pepper, and a little olive oil. Mix all the ingredients well.
In a baking dish, spread 2-3 spoonfuls of the mixture as the base. Scatter the mixture evenly, then place the anchovies on top with their shiny side facing up (the back).
Next, pour the remaining mixture around the anchovies.
In the same bowl with the mixture, add a little water, olive oil, and lemon juice. Stir well and pour over the anchovies. Season with salt, pepper, and fresh oregano.
Place the baking dish in a preheated oven at 180°C (350°F) for 20-30 minutes until they slightly brown.
Serve the baked anchovies hot, drizzled with a little olive oil.
