Delicious oven-baked anchovies with tomatoes, infused with all their flavors, making it a top-notch dish. Perfect for enjoying with friends over a delightful ouzo mezze!
Our Ingredients:
1 kg cleaned anchovies, without heads,
washed 3 ripe tomatoes,
sliced 5-6 cloves of garlic,
sliced ½ bunch of parsley, finely chopped
Salt, pepper, oregano
1 tbsp mild mustard
Olive oil
In a baking dish, arrange the tomato slices. Season with salt, pepper, sprinkle garlic slices, oregano, and drizzle with olive oil. Add finely chopped parsley on top.
In a large bowl, season the anchovies with salt, pepper, a little garlic, mustard, olive oil, and oregano. Mix well to coat the seasoning evenly. Place the anchovies nicely on top of the tomatoes in the baking dish.
Preheat the oven to 180°C (350°F) and bake for about 20 minutes until the anchovies take on color and form a light crust.
Serve garnished with finely chopped parsley and a drizzle of olive oil.
