Barley with Seafood

A delicious barley dish with the delicate flavors and aromas of seafood that flood your palate. It is best enjoyed immediately after preparation and is loved by everyone. That's why you'll often find it on Sunday tables, especially during fasting periods, but also in casual gatherings, accompanied by a glass of wine or ouzo.

Our Ingredients:

250g mixed seafood (shrimp, diced calamari, etc.)

Bisque (fish stock) (optional)

10 mussels, etc.

300g barley

½ small can of tomato paste or two ripe tomatoes, pureed

1 dried onion for the broth

1 finely chopped dried onion

2 cloves of garlic

½ cup white wine

Olive oil

Salt, pepper, spices, bay leaves.

Directions

  1. In a pot, add a little oil, seafood, onion, carrot, garlic, bay leaves, and spices. Saute for 5-7 minutes. Do not overcook, as they will become tough. Once lightly sauteed, remove the seafood.
  2. In the same pot, lightly steam the mussels for 3-4 minutes, then carefully remove them. Saute the finely chopped onion. Then add the garlic, barley, deglaze with wine, add our tomato, and gradually add the broth from the seafood. Stir continuously and gradually add more broth until the barley reaches the desired consistency.
  3. Just before the end, season with salt and pepper, add the seafood, mix well, and serve, garnishing with the mussels.
