Our Ingredients:
In boiling water, blanch the pearl onions and immediately remove them with a slotted spoon. Let them cool down, and with a small knife, remove their outer layer easily and without tears!
In a clay pot, pour the olive oil and add the pearl onions and tomato paste. Saute them over medium heat until they take on a light color. Be careful! Do not stir the onions with a spoon, as they may break apart. Instead, gently shake the pot by the handles. Next, add the garlic cloves and continue sauteing until the onions have acquired color all around. Deglaze the pot with wine, allow the alcohol to evaporate, then add the tomato, fig syrup, and a little warm water. Close the lid and let it simmer over medium heat for 10 minutes.
Preheat the oven to 180°C (356°F). Empty the contents of the pot with the sauce into a clay baking dish and add the cod, ensuring it is fully covered with the sauce and onions. Close the lid and let it cook for about 40 minutes. Then, open the lid and cook for an additional 10 minutes.
Serve this heavenly cod stifado straight from the clay pot, accompanied by crusty bread or rice pilaf. Enjoy every bite of this exquisite dish!
