Ingredients:

  • 1 fresh lobster (around 1-1.2 kg) or 2-3 lobster tails
  • 2 dried onions
  • 500 g orzo pasta
  • 5 finely chopped fresh onions
  • 2 cloves of garlic
  • ½ cup white wine
  • ½ can crushed tomatoes or 2 finely chopped ripe tomatoes
  • 1 carrot
  • Olive oil
  • Salt, pepper, 2 bay leaves, 5 whole cloves
  • A pinch of sugar

Directions

  1. Place the lobster or lobster tails in a pot and add one dried onion, the carrot, 1 clove of garlic, and the bay leaves and cloves tied in a cheesecloth (for easy removal later). Let it boil for 15-20 minutes.
  2. Remove the lobster or lobster tails from the pot, take out the cheesecloth with the spices, and blend the broth with the vegetables using a hand blender until smooth. Keep the broth warm.
  3. In another pot, finely chop one dried onion and the fresh onions, then saute them. Add the garlic and the orzo pasta and stir-fry for a few minutes.
  4. Pour in the white wine and let it evaporate. Add the crushed tomatoes, sugar, and gradually incorporate the warm broth with a spoon, stirring constantly. Adjust the seasoning with salt and pepper.
  5. Just before removing the giouvetsi from the heat, add the lobster or lobster tails cut into slices and let it simmer for a minute or two, ensuring the lobster is cooked through.
  6. Serve the lobster giouvetsi with freshly ground pepper or a sprinkle of dried oregano.
