Ingredients:

  • 1 lobster, approximately 1 kilogram, or 2-3 lobster tails
  • 2 dried onions
  • 250 grams risotto rice
  • 2 cloves of garlic
  • ½ cup white wine
  • 1 carrot
  • A pinch of dill
  • Salt, pepper, 2 bay leaves, 3-4 peppercorns
  • 1 teaspoon butter
  • Olive oil

Directions

  1. Boil the lobster or lobster tails in a pot with one onion, carrot, 1 clove of garlic, and the bay leaves and peppercorns wrapped in a cheesecloth (for easy removal later). Let it boil for 15-20 minutes.
  2. Remove the lobster or lobster tails from the pot, take out the cheesecloth with the spices, and use a blender to puree the broth with the vegetables. Keep the broth warm on the side.
  3. In a separate pot, finely chop the remaining onion and saute it with the fresh garlic. Then add the risotto rice and saute it as well. Pour in the white wine and reduce the heat.
  4. Gradually add the lobster broth to the pot, stirring continuously with a spoon. Just before removing the risotto from the heat, season with salt and pepper, add the butter, and stir well.
  5. Cut the lobster or lobster tails into slices and add them to the risotto.
  6. Serve the lobster risotto garnished with freshly ground pepper and finely chopped dill.
