Marinated sardines

Sardines with oregano, garlic, and lemon! Absolutely wonderful!!! A meze to accompany ouzo or tsipouro, always on our table in winter with legumes, and in summer with our seafood.

Our ingredients:

1 kilogram of small sardines

150 grams of coarse salt

5 cloves of garlic, thinly sliced

2 teaspoons

of oregano olive oil Zest of 2 lemons

Juice of 3 lemons

Directions

Take a sardine in your hands and gently rub its back to soften that area. Then, remove the head, innards, and bones. Rinse them and pat them dry with absorbent paper.

In a container, sprinkle a layer of coarse salt. Place the sardines on top. After laying the first layer, salt them well and continue until you run out of sardines and salt. Then, cover with cling film and leave them in the refrigerator for about a day.

Next, rinse the sardines to remove the salt and place them back in the container, covering them with lemon juice. Leave them in the refrigerator for approximately 6 hours.

Our fillets will have changed color and become much whiter.

In a clean bowl, take the sardines out of the lemon juice and layer them with garlic and oregano. Cover with olive oil and lemon zest, and let them sit in the refrigerator for 2-3 hours.

Serve with our other meze dishes on the table!

• Try adding fennel to the olive oil with the lemon zest.
