Ingredients:
• 500 grams octopus
• 2-3 bay leaves
• 2 onions, finely chopped
• 3 slices of stale bread, soaked and well drained
• Salt and pepper
• 4-5 peppercorns
• 2 tbsp vinegar
• 1 tbsp olive oil
• ½ bunch of finely chopped dill
• ? cup finely chopped mint
• ? cup finely chopped basil
• 2 tbsp self-rising flour
• All-purpose flour for dredging
• Vegetable oil for frying
1. Begin with the octopus. Remove the eye and the beak, and place it in a saucepan with the bay leaves, vinegar, and whole peppercorns.
2. Cover the saucepan and simmer the octopus for 45 minutes to 1 hour (allowing the octopus to cook in its own juices).
3. Once the octopus is cooked, place it in a blender with a little olive oil and puree it.
4. Take a bowl and combine the bread, pureed octopus, self-rising flour, and herbs. Mix well. Cover with plastic wrap and refrigerate for an hour.
5. After refrigeration, mix the mixture again and shape it into small balls.
6. Dredge the balls in all-purpose flour and fry them in hot oil.
7. Sprinkle with marjoram and serve.
