Red Fish in Parchment Paper

Today we are going to make oven-baked fish. It's a light meal with vegetables, very delicious because it will be cooked 'in its own juices.' The parchment paper will seal in all the flavors, and our dish will turn out tender and juicy. It's a perfect cooking method—healthy and practical, as it leaves the baking dish clean without any scrubbing!


Ingredients:
• Approximately 1.5 kg (3.3 lbs) Red Fish, cleaned and cut into portions
• 4-5 potatoes, peeled and sliced into rounds
• 2 carrots, finely diced
• 2 zucchinis, sliced into rounds
• 2-3 tomatoes, thickly sliced
• 2 spring onions or 1 large onion, thinly sliced
• Olive oil
• Salt, pepper, and oregano
• A little parsley and lemon for serving (optional)

Directions

1. Place parchment paper on a baking tray. Do not cut it at the end because we will need to cover it later.
2. Season the fish portions with salt and pepper.
3. Arrange the potato slices on the parchment paper to create a base for the fish. Season them with salt and pepper before adding the fish on top.
4. Add the vegetables on top of the fish, and place two fresh tomato slices over them.
5. Seal the parchment paper tightly to enclose the ingredients.
6. Place the baking tray in a preheated oven at 200°C (400°F) for approximately 2 hours, depending on your oven, on the middle rack.
Tips:
• You can combine it with other vegetables like fennel, bell peppers, etc.
• You can make individual portions using parchment paper, placing each fish portion and its accompanying vegetables in separate parchment packets.
