Stuffed Cuttlefish with Cheese and Tomato

Stuffed cuttlefish with feta cheese, manouri cheese, and tomato is a traditional recipe originating from Greek cuisine. This dish combines the rich flavor of cuttlefish with the creamy texture of feta cheese and manouri cheese, along with the freshness of tomatoes. It is a simple and delicious option that can be enjoyed throughout the year, even as an appetizer.


Ingredients:
•    1 kilogram of frozen cuttlefish
•    2 cups crumbled feta cheese
•    1 cup crumbled manouri cheese
•    1 small onion, finely chopped
•    2 tomatoes, deseeded and diced
•    1 clove of garlic, finely chopped
•    1 green bell pepper, finely chopped
•    1 yellow bell pepper, finely chopped
•    Pepper and oregano
•    Olive oil
For the sauce:
•    1 tomato, grated
•    A handful of dill
•    Olive oil
•    Salt, pepper, and oregano

Directions

1.    In a basin, place tap water with a pinch of salt and thaw the cuttlefish.
2.    Remove the heads, wash them thoroughly, and remove the ink sac.
3.    In a small bowl, combine the crumbled feta cheese, manouri cheese, and oregano.
4.    In a frying pan, saute the onion, garlic, and peppers, then add the diced tomatoes and cook until slightly softened.
5.    Add the sauteed vegetables to the cheese mixture and mix well.
6.    Take a piece of cuttlefish and lightly score the back, then fill it with the cheese and vegetable mixture using a tablespoon.
7.    Secure the opening with a toothpick or two, depending on the size of the cuttlefish.
8.    Grill the stuffed cuttlefish on a griddle for about 5-6 minutes on each side. Alternatively, you can bake them in the oven.
9.    In a bowl, mix the grated tomato with a little olive oil, salt, and pepper. Pour the sauce over the stuffed cuttlefish.
10.    If desired, you can place the stuffed cuttlefish in a baking dish, cover it, and bake it in a preheated oven for about 30 minutes. Then, remove the cover and continue baking for another 15 minutes until the cuttlefish obtains a golden color.
