Ingredients:

6-8 firm tomatoes
½ cup penne pasta
1 finely chopped bell pepper
1 finely chopped leek
200g feta cheese
2 tbsp Kalamata olive fillets
1 egg
Salt, pepper, oregano
A drizzle of olive oil

Directions

Directions:

Halve the tomatoes and slice them into approximately one-centimeter thick slices. Arrange them at the bottom of the baking dish.
Drizzle with a little olive oil, sprinkle with salt and pepper, and bake in the oven until they release their juices.
While the tomatoes are roasting, boil the penne pasta (leave them slightly undercooked as they will continue to cook in the oven) and place them in a bowl. In the same pot, saute the leek and bell pepper lightly in a little oil.
Add the sauteed vegetables to the pasta bowl along with the feta cheese (reserving a portion for topping), one beaten egg, salt, pepper, and Kalamata olive fillets.
Mix the ingredients thoroughly to ensure even distribution.
Take the baking dish with the roasted tomatoes and layer the cooked penne pasta on top. Arrange the tomato slices neatly over the pasta. Season with salt, pepper, sprinkle with oregano, and place the dish in the oven at 180°C (356°F) for 40 to 50 minutes, until the top is golden.
Just before removing from the oven, add a few feta cheese crumbles on top for added flavor and color.
Allow the pie to cool slightly before slicing and serving.
