SHRIMP PASTA
If you are aficionados of seafood flavors and seek a meal that merges simplicity with luxury, shrimp pasta is the quintessential recipe for you. Our ingredients:

8-10 medium or large shrimps
1 onion, finely chopped
1 clove of garlic
1 shot of ouzo
100 g of fresh tomatoes, grated, peeled, and seeds removed
2 tbsp chopped basil
500 g of your favorite pasta
Salt, pepper, chili flakes, sugar

Directions

Let's begin with the shrimps.
Peel the body from the shell and remove the head (keep 2-3 shrimps with the head for garnishing the plate). Remove the intestinal tract along the back and wash them thoroughly.
We take the heads from the shrimps to make a bisque.

In a saucepan, heat olive oil and saute our onion. Then saute the shrimps for just 1 minute on each side, enough to change their color.
Deglaze with ouzo and after allowing the alcohol to evaporate, remove the shrimps and add the bisque and the grated tomatoes, letting our sauce simmer.

While the sauce is simmering, we start boiling the pasta, cooking it for almost half the time suggested on the package. When the sauce thickens, we take the pasta, which is still in its water, and with a fork, add it to the sauce along with the dripping water, and the shrimps. Simmer everything together for 3-4 minutes until the sauce is glazed. Just before finishing, we add finely chopped basil and serve immediately.

We must not overcook our shrimps as they dry out and become rubbery like elastic.
