The ingredients include whole wheat pasta, sausages, eggplant, carrots, red and green bell peppers, mushrooms, zucchinis, feta cheese, salt, pepper, olive oil, and broth. Along with the aromatic touch of oregano and garlic, they create a harmonious blend of flavors. As you can understand, these are simple ingredients, utilizing the vegetables we have in our fridge. And if a particular vegetable is missing, it's not a big deal at all! You can even add your favorite vegetables or substitute as desired.

Ingredients:
• 1 packet whole wheat pasta
• 2 sausages with leeks, sliced
• 1 eggplant, diced
• 2 carrots, sliced
• 1 red bell pepper, thinly sliced
• 1 green bell pepper, thinly sliced
• 1-2 portobello mushrooms, cubed
• 2 zucchinis, diced
• 1 large onion, thinly sliced
• 1-2 tomatoes, diced
• 4 cloves garlic, thinly sliced
• 100g crumbled feta cheese
• Salt and pepper
• Olive oil
• Vegetable or chicken broth
• A pinch of oregano
Instructions:
1. Start by soaking the diced eggplant in salted water. While waiting for it to drain, prepare the rest of the vegetables.
2. After draining, pat the eggplant dry and saute it in a pan with a little olive oil until golden. Set aside.
3. In the same pan, saute the onion, sausages, garlic, bell peppers, carrots, zucchinis, and mushrooms.
4. Add the diced tomatoes and the sauteed eggplant to the pan. Pour in warm broth, season with salt, pepper, and oregano, then let it simmer for 20-30 minutes.
5. Preheat the oven to 200°C (392°F). Pour the sauce into a baking dish and add the cooked pasta. Stir every 5 minutes to prevent sticking and check the liquid levels. Add more warm broth or water if needed.
6. Just before removing from the oven, sprinkle crumbled feta on top and gently mix.
