Our Ingredients:

250g mixed seafood (shrimp, diced calamari, etc.)

10 mussels

250g barley

1 finely chopped onion

2 cloves of garlic

½ cup white wine

vegetable broth or fish stock

olive oil

Salt, pepper, spices, bay leaves.

Directions

  1. In a saucepan, place the seafood, bay leaves, and spices. Saute lightly for 5-7 minutes. Do not overcook, as they will become tough. Once sauteed, remove the seafood with a slotted spoon.
  2. In the same saucepan, lightly steam the mussels for 3-4 minutes, then carefully remove them. Saute the finely chopped onion and garlic. Then add the barley, stir until it glistens, deglaze with wine, and gradually add the broth (or vegetable stock) while stirring continuously. Continue adding broth until the barley reaches the desired consistency.
  3. Just before the end, season with salt and pepper, add the seafood, mix well, and serve, garnishing with the mussels.

• You can add 2-3 strands of Kozani saffron, which pairs perfectly. You can also add some finely chopped tarragon at the end. • Fresh onion works great in this dish. I would recommend trying it instead of dried onion during sauteing. A little lime zest at the end adds a nice touch. • Barley with tomatoes is also delicious. Give it a try!
