This pasta recipe with spinach, zucchini, broccoli, and a mix of cheeses is an easy and delicious dish to enjoy with your family. You can use rigatoni or any other type of pasta you prefer. The recipe includes a mix of tasty vegetables, fresh garlic, and a rich cheese blend that gives a creamy texture and full flavor.

Ingredients:

  • 500g rigatoni, or pasta of your choice
  • 300g fresh spinach leaves, roughly chopped
  • 1 zucchini, sliced lengthwise and then into 1cm pieces
  • 1 small broccoli, cut into small florets
  • 3 cloves of garlic, minced
  • 400g mix of cheeses (including feta cheese)
  • 200g heavy cream
  • 2 eggs
  • ? cup fresh dill
  • 4 fresh spring onions
  • Salt and pepper

Directions

  1. Boil the pasta in a deep pot. 2 minutes before it's ready, add the zucchini and broccoli to the water. Drain the pasta with the vegetables.
  2. In a small pan, lightly saute the fresh spring onions.
  3. In a blender, puree the spinach, dill, and garlic. Pour the mixture into an oiled baking dish along with the pasta and vegetables.
  4. Add the sauteed spring onions, and the egg and cream mixture that has been whisked in a bowl.
  5. Sprinkle the cheese mix (saving a little for topping) over the top and season with salt and pepper.
  6. Stir the ingredients, spreading them evenly in the dish. Sprinkle the remaining cheese on top.
  7. Bake in a preheated oven at 180°C for about 20 minutes, or until golden brown. Serve and enjoy your delicious green pasta!
