We all know how healthy legumes are. Greece, our blessed country, produces a wide variety of legumes, which have been a staple meal from ancient times to the present day, especially for vegetarian and vegan groups of people due to their rich protein content.
Legumes were the main food for Spartans, who, disciplined and austere, needed energy and strength for battles. Along with legumes, they combined their meals with olives, cheese, black broth (broth made from pork meat, blood, and salt), figs, and wine.
"The meat of the poor" is now a recognized nutritious food that forms the basis of our dietary pyramid and is classified as longevity food.
Legumes are not only delicious but can also be used in soups, stews, and salads, accompanying and enhancing our dishes.
They are a great source of iron, as well as dietary fiber, making them a staple in many dietary groups. They contain carbohydrates, vitamins A, C, B, calcium, and phosphorus. They are also low in fat, salt, and have a low glycemic index. They act as a shield against various types of cancer due to their high antioxidant content.
They provide strength and shine to our hair, as well as contribute to skin rejuvenation.
But what happens when you present them on the table and the kids... disappear??? You asked me how we can incorporate legumes into their menu. To introduce them to the taste of legumes, we have a solution. The wonderful legume sauce with a combination of various legumes' flavors. All the valuable ingredients, combined with the pasta that kids love so much. Try this creamy, healthy, and delicious pasta dish!
Ingredients:
• 500g of your choice of pasta
• 250g of mixed legumes
• 1 finely chopped leek
• 1 finely chopped red bell pepper
• 1 finely chopped green bell pepper
• ½ carrot grated
• 1 large finely chopped onion
• 3 cloves of finely chopped garlic
• 80g of olive oil
• ? bunch of finely chopped parsley
• 1 teaspoon of smoked paprika
• 1 bay leaf
• Salt and pepper
1. In a pot, boil the mixed legumes with the bay leaf. Once they are cooked, set aside 2-3 tablespoons of legumes, a cup of broth from the legumes, and lightly blend the remaining legumes in a blender.
2. Boil the pasta according to the instructions on the package.
3. In a separate clean pot, saute the onion, leek, bell peppers, carrot, and garlic. Then add the pureed legumes, saute lightly, pour in the reserved broth, add the spices, and simmer until the sauce becomes slightly creamy. Add the reserved legumes. Our sauce is ready.
Additional Notes:
• Discard the first boiling water of the legumes and remove any foam while boiling.
• If the kids don't want to see the legumes at all, simply puree them completely.
• You can add tomatoes to further deceive their taste buds if they find it challenging.
