Macaroni with Tuna Sauce

This recipe combines the flavors of tuna with a rich sauce that perfectly complements the beloved pasta. Ingredients:
• 2 cans of tuna in water
• 1 package of your favorite macaroni
• 2-3 tablespoons of olive oil
• 1 finely chopped onion
• 1-2 cloves of finely chopped garlic
• 1 can of tomato sauce or crushed tomatoes
• A handful of finely chopped parsley
• 1 shot of ouzo (optional)
• (Optional: 1 tablespoon of capers and 1 tablespoon of sliced olives)

Directions

 

  1. In a saucepan, heat the olive oil and add the chopped onion. Saute lightly and then add the garlic and tuna (keep the tuna water aside). Saute for a moment and then extinguish the flame with the ouzo. Let it sit for a while to allow the alcohol to evaporate.
2. Add the tomato sauce and the water from the tuna to the saucepan. Allow the sauce to simmer.
3. Meanwhile, in a separate pot, boil water with a tablespoon of salt to cook the macaroni. Once the water reaches a rolling boil, add the macaroni and stir. The cooking time will depend on the type of macaroni you have chosen. Refer to the instructions on the package.
4. Allow the sauce to simmer for about fifteen minutes, and just before removing it from the heat, add the parsley.
5. Drain the cooked macaroni and mix it with the tuna sauce.
6. Serve with freshly ground pepper and, if desired, sprinkle with grated Parmesan cheese or add a dollop of yogurt on top.
Notes:
1. If the tuna is in oil, use that oil for sauteing and omit the additional olive oil.
2. If using capers and olives, make sure to rinse them before adding to the dish.
3. If desired, you can add other ingredients such as bell peppers, mushrooms, etc. These should be finely chopped and prepared in advance, as the tuna will be ready at the same time.
4. For a creamier sauce, you can add 3-4 tablespoons of heavy cream before finishing the sauce or 2-3 tablespoons of yogurt after removing it from the heat.
