Neapolitan Pasta
A well-known sauce that has become our favorite due to its simplicity. It's easy, quick, and serves as the base for many dishes (such as meatballs, stews, etc.). We encounter it everywhere, and it's our first choice for a sauce, especially when we're in a hurry.
Our Ingredients:
500g pasta of your choice
4 ripe tomatoes, pureed (seeds and skin removed) or canned tomatoes
1 finely chopped onion
2 cloves of garlic, finely chopped
1 tbsp tomato paste
? tsp sugar
2 tbsp finely chopped basil
Olive oil
Salt and pepper
Optional: Pecorino or Parmesan cheese for serving
Cook the pasta according to the manufacturer's instructions. In a small pot, heat the olive oil and saute the onion until translucent. Then add the garlic, saute for a moment, and add the tomatoes and sugar. Season with salt and pepper. Lower the heat and let the sauce simmer gently (the secret is to let it simmer slowly to evaporate all the water and thicken the tomato sauce). Once the sauce has thickened, add the basil and turn off the heat. Serve the sauce over hot pasta, generously ladling the sauce over it. Finish with freshly ground pepper and sprinkle some cheese on top, if desired.
