Here's what you'll need:
• 500g penne pasta
• 1 head of broccoli, cut into small florets
• 1 onion, finely chopped
• 2 cloves of garlic, minced
• 200g bacon
• Sweetcorn kernels
• 200g grated mixed cheeses
• 300g cream
• Salt and pepper
• Olive oil

Directions

We start by blanching the broccoli florets for a few minutes until they slightly soften. Be careful not to overcook them, as we want them to retain their texture when mixed with the sauce.
Next, we drain the broccoli and cook the pasta in the same pot according to the manufacturer's instructions.
In a pan, saute the onion, followed by the garlic, bacon, broccoli, and sweetcorn. Deglaze the pan with cream and gently stir to avoid breaking up the broccoli florets. Add the grated mixed cheeses and allow the sauce to simmer until it thickens.
Finally, add the cooked pasta to the pot and pour the sauce over it. Gently toss everything together and serve.
