Embark on an effortless journey of flavors and aromas from Greece with this simple traditional pasta recipe. At its heart lies a sauce crafted from tomatoes and a touch of the exceptionally flavorful Lefkadian sausage. How could it not become our favorite pasta dish?
Our Ingredients
2 pieces of Lefkadian sausage
1 dry onion, finely chopped
½ red bell pepper, finely chopped
½ green bell pepper, finely chopped
½ yellow bell pepper, finely chopped
2 cloves of garlic, finely chopped
1 tbsp olives, sliced
1 tbsp tomato paste
1 tomato, diced
1 can of crushed tomatoes
1 pack of your favorite pasta
½ cup white wine
Thyme, oregano,
salt, pepper
Olive oil
Grated feta cheese for serving (optional)
First, boil our pasta and drain it. (Keep a bit of pasta water for our sauce.) In a wide saucepan, add a drizzle of olive oil. Slice our Lefkadian sausage and saute it. Then, add the tomato paste, onion, garlic, bell peppers, and olives. Let them develop a beautiful color and deglaze with wine. Incorporate our diced tomato, spices, and a bit of pasta water. Let it gently simmer for 10 minutes. Serve the sauce over our pasta. Optionally, grate some feta cheese, sprinkle freshly ground pepper, and add a touch of fresh oregano for a finishing touch.
