Our ingredients:
500g pasta of your choice
18 fresh mussels and clams
1 dry onion, finely chopped
2 cloves of garlic, minced
10-12 cherry tomatoes
? cup white wine
Olive oil
Fresh parsley, finely chopped
Salt and pepper
Boil the pasta according to the instructions on the package.
Start with the mussels and clams. Place them in a bowl of water for a few minutes. Then, rinse them thoroughly, rubbing them against each other and using a special brush if available.
Next, place them in a pan without any added oil and steam for 2-3 minutes until they open. Discard any that don't open. Set the pan aside and strain the broth that they release.
In a deep saucepan, heat a little olive oil and saute the chopped onion until golden and softened. Add the minced garlic and cherry tomatoes. Then, add the mussels and clams, and deglaze with white wine. Pour in the broth from the seafood, and season with salt and pepper.
Combine the sauce with the cooked pasta, stirring well. Serve with freshly ground black pepper and finely chopped parsley.
