Pasta with zucchini and mushrooms
Enjoy a light, tasty, and easy dish of pasta with zucchini and mushrooms. This recipe is one of my favorite pasta dishes as it combines the freshness of zucchini with the rich flavor of mushrooms. It is easy to prepare, delicious, quick, and aromatic.

The preparation of this recipe is simple and flexible, allowing you to adjust the ingredients and quantities according to your preferences. With just a few steps, you can create a dish full of flavor and healthiness.
Here are our ingredients:
• 4 zucchini, halved lengthwise and thinly sliced
• 500g pasta of your choice
• 1 dry onion, finely chopped
• 4 fresh spring onions, finely chopped
• 200g assorted mushrooms, sliced
• 50g dill, finely chopped
• 3 cloves of garlic, finely chopped
• 5-6 sun-dried tomato slices, finely chopped
• 200g heavy cream
• 50g grated Parmesan cheese
• Salt and pepper to taste
• A drizzle of olive oil
We boil the pasta for 2 minutes less than the package instructions. We drain the pasta, reserving a cup of the cooking water.
In a deep frying pan, saute the zucchini, dry onion, and fresh spring onions in olive oil. Then add the garlic and sun-dried tomatoes, along with the mushrooms. Next, pour in the heavy cream, Parmesan cheese, and the cooked pasta. Reduce the heat and add salt, pepper, and dill.
Serve the dish hot and enjoy the delightful combination of flavors.
