A very special dish that will captivate you with its aromas and flavors, and I'm sure it will become one of your favorites! The dish can easily be made without the smoked pork, as it balances well with the mushrooms and other vegetables.
Let's take a look at our ingredients:
1 kilogram pumpkin (peeled and cut into small cubes)
1 leek (sliced into thin rounds)
2 oranges (segmented and diced)
1 package of button mushrooms (quartered)
1/2 packet of Arborio rice
250 grams smoked pork (cut into cubes)
A little butter
A little olive oil
1 glass of white wine (preferably with citrus notes)
Approximately
1 liter vegetable broth
Salt and pepper
A little dill
A little mizithra cheese
Heat the olive oil and saute the leek. Then add the smoked pork, pumpkin, and mushrooms, and saute them as well. Deglaze with the wine and wait for the alcohol to evaporate. Let it simmer for 10 minutes. Then add the rice. Add the broth and simmer on low heat until the liquid is absorbed by the rice. If needed, add a little more broth. Let it simmer until the liquids are absorbed. Just before it's done, add the orange segments, butter, and finely chopped dill.
Serve by placing the risotto inside the pumpkin.
