Our Ingredients

½ kg cleaned and well-washed seafood

2 cups risotto rice

5 cups shrimp broth

½ kg cleaned shrimp

2-3 fresh onions, finely chopped

1 celery stalk, finely chopped

2 cloves of garlic, finely chopped

½ can of diced tomatoes

½ wine glass of white wine

A handful of finely chopped parsley

Olive oil Salt and pepper

 

For the shrimp broth (bisque)

Shrimp heads

1 onion

1 carrot

½ leek

1 celery stalk

1 tsp tomato paste

Peppercorns

Olive oil

200g white wine

Directions

We start by preparing the shrimp broth so that it is ready for our dish. In a saucepan, heat the olive oil and add the shrimp heads. Let them brown well, stirring constantly. Then, add the tomato paste, rubbing it on the shrimp heads and the bottom of the saucepan. Add the roughly chopped vegetables and deglaze with wine. Allow the alcohol to evaporate and then add water, peppercorns, and reduce the heat. Let it simmer for 30-40 minutes. Strain the broth through a sieve, pressing the ingredients to extract as much liquid as possible.

In a wide pot, saute the onion, followed by the garlic, and then add the seafood and shrimp. Deglaze with wine, and once they boil and the shells open, remove them and place them in a bowl, keeping them warm. Discard any unopened shells. Then, add the diced tomatoes, our rice, the shrimp broth, and season with salt and pepper. Reduce the heat and simmer until the rice absorbs all the broth. Remove it from the heat, add the seafood, and stir. Sprinkle with parsley and freshly ground pepper.
