A light, nutritious, and delicious dish that will satisfy your hunger without weighing you down. For those conscious of their diet, it's a dish that they will surely love. It comes together quickly, and the ingredients are affordable. If you try it once, I'm confident it will become one of your favorites, just like it is for me.
Ingredients:
500g spaghetti or pasta of your choice
200g coarsely chopped spinach leaves
15 cherry tomatoes, halved
2 small containers of yogurt
2 cloves of garlic
200g crumbled feta cheese + 100g for serving
140g boiled corn kernels
Olive oil
Salt and pepper
In a pot with salted water, boil the spaghetti for 2-3 minutes less than the recommended cooking time. Reserve 1 cup of the pasta water.
In a blender, combine the spinach, garlic, a drizzle of olive oil, and a little yogurt.
In a pan, lightly saute the cherry tomatoes and corn kernels. Add the blended mixture and the remaining yogurt to the pan, followed by the cooked spaghetti, crumbled feta cheese, and mix well. If needed, add some of the reserved pasta water to achieve the desired consistency.
Serve with crumbled feta cheese and freshly ground pepper.
