Ingredients:
• 2 pieces of smoked tuna
• 500g squid ink pasta (or any other pasta of your choice)
• 1 finely chopped onion
• 1 finely chopped red pepper
• 1 finely chopped green pepper
• 2 cloves of finely chopped garlic
• 3 ripe tomatoes, finely chopped
• 80g white wine
• Finely chopped parsley for garnish
• Salt and pepper
• Olive oil
Instructions:
1. In a pot of boiling water, add a pinch of salt and cook the pasta for a couple of minutes less than the recommended time since we will finish cooking it with the sauce.
2. In a separate saucepan, saute the peppers and onion in olive oil. Then add the garlic and smoked tuna, and lightly saute. Deglaze with white wine and add the tomatoes. Reduce the heat and let it simmer for 7-8 minutes.
3. Add the cooked pasta to the sauce and let it simmer for an additional couple of minutes to absorb the flavors of the sauce.
4. Serve immediately, garnished with finely chopped parsley.
