Discover the traditional village-style pasta, packed with garden-fresh ingredients. Tomatoes, peppers, zucchini, eggplant – all the goodness of nature combined with our beloved pasta in a rich and flavorful dish that is quick and light. You can replace the cheese with a fasting option to create a delightful fasting pasta or use vegan cheese for vegan-vegetarian groups.


Our ingredients:
• 500 grams of your favorite pasta
• 1 finely chopped onion
• 2 finely chopped garlic cloves
• 1 finely chopped green bell pepper
• 1 diced zucchini
• 1 finely chopped red bell pepper
• 1 diced eggplant, soaked in water and drained
• 1 can of cherry tomatoes, halved
• 100 grams of grated feta cheese + 50 grams for serving
• 80 grams of olive oil fillets
• 1 tablespoon of capers
• 30 grams of ouzo
• Thyme and oregano
• Olive oil
• Salt and pepper

Directions

Start by boiling the pasta. Cook it for the time recommended by the manufacturer, but remember to reserve a cup of water before draining it.
In a frying pan, heat some olive oil and saute the eggplant and finely chopped peppers. Add the onion, followed by the garlic, zucchini, olives, capers, and deglaze with ouzo. Allow the alcohol to evaporate, then add the reserved cup of pasta water, herbs, grated feta cheese, cherry tomatoes, and let the sauce thicken.
Add the cooked pasta to the saucepan and mix well.
Serve the dish with extra grated feta cheese, a drizzle of olive oil, and freshly cracked pepper.
