An unconventional, low-calorie salad full of flavor and aromas, packed with nutritious ingredients that remind us salads can be satisfying meals without feeling heavy!
Our ingredients:
1 cup buckwheat
1 cup boiled corn
½ cup boiled red beans
2 cups baby arugula
Segments of 2 oranges
150g smoked salmon
20g sunflower seeds
20g crushed walnuts
20g pomegranate seeds (optional)
For the orange dressing:
40g orange juice
Zest from one orange
1 tsp spicy mustard
100g olive oil
Salt, pepper
In a bowl, mix all the salad ingredients together.
In another bowl, combine the orange segments with the mustard. Gradually pour in the olive oil while stirring. Season with salt, pepper, and add the orange zest. Drizzle the dressing over our salad.
